Makes 4 servings
- Lean turkey mince 500 g / 17.6 oz
- Egg 1
- Breadcrumbs 40 g / 1.4 oz
- Chopped tomatoes (tin) 800 g / 28 oz
- Onion, garlic, olive oil to taste
- Italian herbs, salt, pepper to taste
Method
- Mix the turkey mince with the egg, breadcrumbs, half the garlic, salt and pepper. Roll into meatballs.
- Brown the meatballs in olive oil for a few minutes, then set aside.
- In the same pan, soften the onion and remaining garlic, add the chopped tomatoes and herbs, and simmer for 10 minutes.
- Return the meatballs to the sauce and simmer for 15 minutes until cooked through. Serve.
Tips
- Do not overwork the mince or the meatballs become dense.
- The sauce tastes even better the next day, so it is ideal for meal prep.
- Serve over courgette noodles or cauliflower rice to keep it lighter.
