Ingredients
Makes 2 servings
- Cod fillets 2 x 160 g / 2 x 5.6 oz
- Sweet potato, cubed 400 g / 14 oz
- Green beans 150 g / 5.3 oz
- Olive oil 2 tbsp
- Lemon, garlic, paprika, salt, pepper to taste
Method
- Preheat the oven to 200°C (400°F). Toss the sweet potato with 1 tbsp oil, paprika, salt and pepper, and roast for 20 minutes.
- Add the cod fillets to the tray, drizzle with the remaining oil, lemon and garlic.
- Add the green beans alongside, and bake for a further 15 minutes until the cod flakes easily.
- Serve with an extra squeeze of lemon.
Tips
- Do not overbake the cod: it is ready as soon as it flakes with a fork.
- Swap cod for haddock, hake or any firm white fish.
- Roast the sweet potato a little longer if you like crispier edges.
