Ingredients

Makes 2 servings

  • Banana, ripe 2 medium
  • Eggs 3 large
  • Rolled oats 80 g / 2.8 oz
  • Whey protein powder 1 scoop (30 g) / 1 oz
  • Baking powder, cinnamon 1 tsp

Method

  1. Blend the banana, eggs, oats, protein powder, baking powder and cinnamon until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease.
  3. Pour small rounds of batter and cook for 2 minutes until bubbles form, then flip and cook for 1 more minute.
  4. Stack and serve with berries or a spoon of yogurt.

Tips

  • Keep the pancakes small for easier flipping.
  • Let the batter rest for 5 minutes so the oats absorb some liquid and thicken.
  • No protein powder? Use an extra egg and a spoon of Greek yogurt instead.
