This one uses lean turkey mince for a high-protein, lower-fat base, with a light soy and garlic sauce that lets the vegetables shine. Serve it on its own for a low-carb meal, or over rice for something more filling. Once you have the method down, you can swap in whatever vegetables are in the fridge.

Ingredients
Makes 2 servings
- Lean turkey mince 300 g / 10.5 oz
- Broccoli florets 150 g / 5.3 oz
- Bell pepper, sliced 150 g / 5.3 oz
- Carrot, julienned 100 g / 3.5 oz
- Soy sauce 2 tbsp
- Garlic and ginger, minced 1 tbsp
- Sesame oil 1 tbsp
Method
- Heat the sesame oil in a large pan or wok over high heat.
- Add the turkey mince and cook for 5 minutes, breaking it up, until browned.
- Add the garlic, ginger and all the vegetables. Stir-fry for 5 to 6 minutes until tender-crisp.
- Pour in the soy sauce, toss to coat, and cook for 1 more minute. Serve hot.
Tips
- Keep the heat high and the vegetables moving for the best texture.
- Add a pinch of chilli flakes or a squeeze of lime for extra flavour.
- Serve over brown rice or cauliflower rice depending on your carb goals.
