Ingredients

- Quinoa (dry) 120 g / 4.2 oz
- Black beans (cooked) 240 g / 8.5 oz
- Sweetcorn 120 g / 4.2 oz
- Avocado, sliced 1 small
- Cherry tomatoes, halved 100 g / 3.5 oz
- Lime, coriander, olive oil, cumin to taste
Method
- Rinse and cook the quinoa in 240 ml water for 15 minutes until fluffy.
- Warm the black beans with a pinch of cumin.
- Divide the quinoa between two bowls and top with the beans, corn, tomatoes and avocado.
- Finish with a squeeze of lime, fresh coriander and a drizzle of olive oil.
Tips
- Add a spoon of salsa or hot sauce for extra Mexican flavour.
- Top with a dollop of Greek yogurt if you are not keeping it vegan.
- Roast the corn for a smoky, charred note.
