- Chicken breast, diced 300 g / 10.5 oz
- Rice (dry) 120 g / 4.2 oz
- Black beans (cooked) 160 g / 5.6 oz
- Sweetcorn 100 g / 3.5 oz
- Salsa 80 g / 2.8 oz
- Avocado, lime, cumin, paprika to taste
Method
- Cook the rice according to the packet instructions.
- Season the diced chicken with cumin and paprika, then pan-fry for 6 to 8 minutes until cooked through.
- Warm the black beans and corn.
- Build the bowls with rice, chicken, beans, corn, salsa and sliced avocado. Finish with a squeeze of lime.
Tips
- Cook the rice and chicken in advance for fast assembly during the week.
- Add jalapeños or hot sauce if you like it spicy.
- Swap rice for cauliflower rice to lower the carbs.
